CHORIZO AND FRESH GOAT CHEESE QUICHE
Portions : 6 - Preparation time : 10 minutes - Cooking time : 45 to 50 minutes
Ingredients
- 4 eggs
- 125 ml (1/2 cup) milk
- 125 ml (1/2 cup) 35% cream
- 30 ml (2 tablespoons) parsley, chopped
- 125 ml (1/2 cup) mild or hot chorizo, cut into small cubes
- 1 homemade or store-bought shortcrust pastry
- 125 ml (1/2 cup) fresh goat's cheese, in small pieces
- 125 ml (1/2 cup) mozzarella, grated
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 180° C (350° F).
- In a bowl, whisk together eggs, milk, cream, parsley, salt and pepper.
- In a hot, fat-free frying pan, brown the chorizo for a few minutes until crisp. Place on absorbent paper.
- Place the shortcrust pastry in a baking tin. Divide among the chorizo and goat's cheese, and pour the prepared mixture over the top. Top with mozzarella.
- Bake in the oven for 30-45 minutes, until cooked through.
