Ingredients
- 4 medium beets, cooked and diced
- 1 green apple, thinly sliced
- 50 g (approx. 1/2 cup) pecans, toasted
For the vinaigrette
- 15 ml (1 tablespoon) cider vinegar
- 45 ml (3 tablespoons) walnut oil
- 5 ml (1 tsp.) honey
- Salt and pepper to taste
Instructions
- Combine beets, apple slices and pecans in a salad bowl.
- Prepare vinaigrette by mixing cider vinegar, walnut oil and honey, and seasoning with salt and pepper.
- Pour dressing over salad, toss gently and serve.
