Beet, green apple and pecan salad

Salade de betteraves, pommes vertes et noix de pécan

Ingredients

  • 4 medium beets, cooked and diced
  • 1 green apple, thinly sliced
  • 50 g (approx. 1/2 cup) pecans, toasted

For the vinaigrette

  • 15 ml (1 tablespoon) cider vinegar
  • 45 ml (3 tablespoons) walnut oil
  • 5 ml (1 tsp.) honey
  • Salt and pepper to taste

Instructions

  1. Combine beets, apple slices and pecans in a salad bowl.
  2. Prepare vinaigrette by mixing cider vinegar, walnut oil and honey, and seasoning with salt and pepper.
  3. Pour dressing over salad, toss gently and serve.
