BROCCOLI AND QUEBEC APPLE SALAD

Ingredients
- 45 ml (3 tablespoons) plain yogurt
- 60 ml (4 tablespoons) olive oil
- 30 ml (2 tablespoons) white balsamic vinegar
- 1 clove garlic, minced
- 1L (4 cups) broccoli heads
- 2 Honeycrisp apples, cubed
- 250 ml (1 cup) cherry tomatoes
- 1 red onion, thinly sliced
- 250 ml (1 cup) bread croutons
- 125 ml (1/2 cup) roasted almonds or hazelnuts, crushed
- Salt and pepper to taste
Preparation
- In a bowl, combine yogurt, olive oil, balsamic vinegar and garlic. Season with salt and pepper.
- Add broccoli, apples, tomatoes and onion. Mix well and garnish with bread croutons and roasted walnuts.
