Grated carrot salad with coriander and citrus vinaigrette

Salade de carottes râpées, coriandre et vinaigrette aux agrumes

Ingredients

  • 4 carrots, grated (about 2 cups)
  • 30 ml (2 tbsp) chopped fresh cilantro

For the dressing

  • 30 ml (2 tbsp) fresh orange juice
  • 15 ml (1 tbsp) lemon juice
  • 45 ml (3 tbsp) olive oil
  • Salt and pepper to taste

Instructions

  1. Mix grated carrots and cilantro in a salad bowl.
  2. Make the dressing by mixing orange juice, lemon juice and olive oil, season with salt and pepper.
  3. Pour dressing over carrots, toss and serve.
