Ingredients
- 4 carrots, grated (about 2 cups)
- 30 ml (2 tbsp) chopped fresh cilantro
For the dressing
- 30 ml (2 tbsp) fresh orange juice
- 15 ml (1 tbsp) lemon juice
- 45 ml (3 tbsp) olive oil
- Salt and pepper to taste
Instructions
- Mix grated carrots and cilantro in a salad bowl.
- Make the dressing by mixing orange juice, lemon juice and olive oil, season with salt and pepper.
- Pour dressing over carrots, toss and serve.
