Grated carrot salad with raisins and orange juice

Salade de carottes râpées, raisins secs et jus d'orange

Ingredients

  • 4 carrots, grated (about 2 cups)
  • 50 g (about 1/2 cup) raisins

For the vinaigrette

  • 30 ml (2 tablespoons) fresh orange juice
  • 15 ml (1 tablespoon) lemon juice
  • 30 ml (2 tablespoons) olive oil
  • Salt and pepper to taste

Instructions

  1. Mix grated carrots and raisins in a salad bowl.
  2. Prepare vinaigrette by mixing orange juice, lemon juice and olive oil, then season with salt and pepper.
  3. Pour the vinaigrette over the carrots, toss and serve.
