Red cabbage, apple and cider vinaigrette salad

Salade de chou rouge, pommes et vinaigrette au cidre

Ingredients

  • 1/2 red cabbage, thinly sliced (about 4 cups)
  • 1 green apple, thinly sliced
  • 50 g (approx. 1/2 cup) walnuts, toasted

For the vinaigrette

  • 30 ml (2 tablespoons) cider vinegar
  • 45 ml (3 tablespoons) olive oil
  • 5 ml (1 tsp.) honey
  • Salt and pepper to taste

Instructions

  1. Combine chopped red cabbage and apple slices in a salad bowl.
  2. Add toasted walnuts.
  3. Prepare vinaigrette by mixing cider vinegar, olive oil and honey, then season with salt and pepper.
  4. Pour vinaigrette over salad, toss and serve.
