Ingredients
- 2 zucchini, thinly sliced lengthwise
- 100 g feta, crumbled (about 1/2 cup)
- 15 ml (1 tbsp) fresh mint, chopped
- 30 ml (2 tbsp) olive oil for grilling zucchini
For the dressing
- 15 ml (1 tbsp) lemon juice
- 45 ml (3 tbsp) olive oil
- Salt and pepper to taste
Instructions
- Grill zucchini slices with olive oil on a grill or in a frying pan until golden brown.
- Arrange grilled zucchini on a serving platter, sprinkle with crumbled feta and chopped mint.
- Make the dressing by mixing lemon juice and olive oil, season with salt and pepper.
- Drizzle dressing over salad and serve.
