Grilled Zucchini, Feta and Fresh Mint Salad

Salade de courgettes grillées, feta et menthe fraîche

Ingredients

  • 2 zucchini, thinly sliced ​​lengthwise
  • 100 g feta, crumbled (about 1/2 cup)
  • 15 ml (1 tbsp) fresh mint, chopped
  • 30 ml (2 tbsp) olive oil for grilling zucchini

For the dressing

  • 15 ml (1 tbsp) lemon juice
  • 45 ml (3 tbsp) olive oil
  • Salt and pepper to taste

Instructions

  1. Grill zucchini slices with olive oil on a grill or in a frying pan until golden brown.
  2. Arrange grilled zucchini on a serving platter, sprinkle with crumbled feta and chopped mint.
  3. Make the dressing by mixing lemon juice and olive oil, season with salt and pepper.
  4. Drizzle dressing over salad and serve.
