Ingredients
- 2 zucchinis, thinly sliced lengthwise
- 15 ml (1 tablespoon) fresh mint, chopped
- 30 ml (2 tablespoons) olive oil for grilling zucchini
For the vinaigrette
- 15 ml (1 tbsp.) lemon juice
- 30 ml (2 tablespoons) olive oil
- Salt and pepper to taste
Instructions
- Grill zucchini slices in olive oil on a grill or frying pan until golden.
- Arrange the grilled zucchini on a serving dish and sprinkle with chopped mint.
- Prepare vinaigrette by mixing lemon juice and olive oil, seasoning with salt and pepper.
- Pour the vinaigrette over the salad and serve.
