Grilled zucchini, mint and lemon salad

Salade de courgettes grillées, menthe et citron

Ingredients

  • 2 zucchinis, thinly sliced lengthwise
  • 15 ml (1 tablespoon) fresh mint, chopped
  • 30 ml (2 tablespoons) olive oil for grilling zucchini

For the vinaigrette

  • 15 ml (1 tbsp.) lemon juice
  • 30 ml (2 tablespoons) olive oil
  • Salt and pepper to taste

Instructions

  1. Grill zucchini slices in olive oil on a grill or frying pan until golden.
  2. Arrange the grilled zucchini on a serving dish and sprinkle with chopped mint.
  3. Prepare vinaigrette by mixing lemon juice and olive oil, seasoning with salt and pepper.
  4. Pour the vinaigrette over the salad and serve.
