Ingredients
- 1 can chickpeas (400 g), drained and rinsed (about 2 cups)
- 1 cucumber, diced (about 1 cup)
- 200 g cherry tomatoes, halved (about 1 1/2 cups)
- 15 ml (1 tbsp) fresh parsley, chopped
For the dressing
- 30 ml (2 tbsp) lemon juice
- 45 ml (3 tbsp) olive oil
- Salt and pepper to taste
Instructions
- Mix chickpeas, cucumber, cherry tomatoes and parsley in a salad bowl.
- Prepare the dressing by mixing lemon juice, olive oil, salt and pepper.
- Pour dressing over salad, toss and serve.
