Chickpea, cucumber and cherry tomato salad

Salade de pois chiches, concombres et tomates cerises

Ingredients

  • 1 can chickpeas (400 g), drained and rinsed (about 2 cups)
  • 1 cucumber, diced (about 1 cup)
  • 200 g cherry tomatoes, halved (about 1 1/2 cups)
  • 15 ml (1 tbsp) fresh parsley, chopped

For the dressing

  • 30 ml (2 tbsp) lemon juice
  • 45 ml (3 tbsp) olive oil
  • Salt and pepper to taste

Instructions

  1. Mix chickpeas, cucumber, cherry tomatoes and parsley in a salad bowl.
  2. Prepare the dressing by mixing lemon juice, olive oil, salt and pepper.
  3. Pour dressing over salad, toss and serve.
