Ingredients
- 500 g new potatoes, cooked and cut into chunks (about 3 cups)
- 2 shallots, thinly sliced
- 30 ml (2 tbsp) fresh chives, chopped
For the dressing
- 30 ml (2 tbsp) cider vinegar
- 60 ml (4 tbsp) olive oil
- 5 ml (1 tsp) Dijon mustard
- Salt and pepper to taste
Instructions
- Mix the warm potatoes with the shallots and chives in a salad bowl.
- Prepare the dressing by mixing the cider vinegar, mustard and olive oil, season with salt and pepper.
- Pour the dressing over the potatoes, mix gently and serve.
