Warm potato salad with shallots and chives

Salade de pommes de terre tièdes, échalotes et ciboulette

Ingredients

  • 500 g new potatoes, cooked and cut into chunks (about 3 cups)
  • 2 shallots, thinly sliced
  • 30 ml (2 tbsp) fresh chives, chopped

For the dressing

  • 30 ml (2 tbsp) cider vinegar
  • 60 ml (4 tbsp) olive oil
  • 5 ml (1 tsp) Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Mix the warm potatoes with the shallots and chives in a salad bowl.
  2. Prepare the dressing by mixing the cider vinegar, mustard and olive oil, season with salt and pepper.
  3. Pour the dressing over the potatoes, mix gently and serve.
