TOMATO, MANGO AND FETA SALAD

Ingredients
- 15 ml (1 tablespoon) hot mustard
- 60 ml (4 tablespoons) olive oil
- 1 garlic clove
- 60 ml (4 tablespoons) white balsamic vinegar
- 1 pinch cayenne pepper
- 8 mint leaves, chopped
- 4 heirloom tomatoes, diced
- 1 mango, cubed
- 125 ml (1/2 cup) feta cheese, crumbled
- salt and freshly ground pepper to taste
Preparation
- In a bowl, combine mustard, oil, garlic, vinegar, hot pepper, salt and pepper.
- Add the mint, tomato and mango cubes and toss to combine.
- Arrange the salad on a serving dish and add the feta cheese.
