Tomato, mango and feta salad

TOMATO, MANGO AND FETA SALAD

Portions : 4 - Preparation time : 10 minutes

Ingredients

  • 15 ml (1 tablespoon) hot mustard
  • 60 ml (4 tablespoons) olive oil
  • 1 garlic clove
  • 60 ml (4 tablespoons) white balsamic vinegar
  • 1 pinch cayenne pepper
  • 8 mint leaves, chopped
  • 4 heirloom tomatoes, diced
  • 1 mango, cubed
  • 125 ml (1/2 cup) feta cheese, crumbled
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine mustard, oil, garlic, vinegar, hot pepper, salt and pepper.
  2. Add the mint, tomato and mango cubes and toss to combine.
  3. Arrange the salad on a serving dish and add the feta cheese.
