SALMON EN PAPILLOTTE

Ingredients
- 4 sheets of parchment paper
- 4 salmon steaks
- 20 ml (4 teaspoons) hot mustard
- 20 ml (4 teaspoons) maple syrup
- 20 ml (4 tsp.) tarragon leaves, chopped
- 60 ml (4 tbsp.) olive oil
- 1 lemon, sliced
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- Lay out sheets of parchment paper on a work surface, and place a salmon steak on each sheet.
- Brush each salmon steak with salt, pepper, mustard, maple syrup, chopped tarragon, olive oil and lemon slices.
- Fold each sheet of parchment paper over the salmon, folding the paper tightly.
- Place the papillotes on an ovenproof tray and bake for 20 minutes.
