BUFFET-STYLE SPARE RIBS
Portions : 4 - Preparation : 10 minutes - Cooking time : about 70 minutes
Ingredients
- 2 lb (1 kg) spare ribs, cut into pieces
- 1 l (4 cups) lager
- 375 ml (1 ½ cups) brown sugar
- 60 ml (4 tbsp.) soy sauce
- 15 ml (1 tbsp.) hot sauce
- 60 ml (4 tbsp.) white or rice vinegar
- 1 lime, zest
- 15 ml (1 tbsp.) ginger, chopped
- 2 garlic cloves, chopped
- Salt and pepper to taste
Preparation
- In a saucepan, add 2 l (8 cups) water, ribs and beer, bring to a simmer and cook over medium heat for 45 minutes.
- Remove, drain and rinse ribs.
- Melt brown sugar in a skillet over medium heat.
- Add ribs, soy sauce, hot sauce, vinegar, lime zest, ginger and garlic and cook, covered, over low heat for 15 minutes.
- Reduce heat 3 to 4 minutes to thicken sauce.
- Serve ribs with rice and sautéed vegetables.
