Quinoa and red fruit crumble

QUINOA AND RED FRUIT CRUMBLE

Portions : 6 - Preparation : 15 minutes - Cooking time : 40 minutes

Ingredients

Quinoa crumble

  • 125 ml (1/2 cup) raw GOGO QUINOA quinoa
  • 250 ml (1/2 cup) butter
  • 180 ml (1 cup) flour
  • 125 ml (1/2 cup) sugar
  • 1 pinch salt
  • 1 lemon, zest

Red berries

  • 1 l (4 cups) red berries
  • 15 ml (1 tablespoon) lemon juice
  • 60 ml (1/4 cup) sugar
  • 30 ml (2 tablespoons) cornstarch
  • 2 pinches salt

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, using a fork or pastry blender, mix all crumble ingredients. Place the mixture on a baking sheet lined with parchment paper or a silicone mat, and bake for 25 minutes or until golden-brown.
  3. Meanwhile, in a frying pan, brown the berries with the lemon juice, sugar, cornstarch and salt.
  4. Cook over a high heat for 5 minutes, then reduce the heat to simmer for a further 5 minutes.
  5. Divide the fruit mixture between 6 ramekins.
  6. Cover the fruit with the crumble and set aside.
  7. When ready to serve, place in the oven for a few minutes to reheat the dessert. Top with a little Greek yogurt, ice cream or whipped cream.
