I recommend using crunchy peanut butter for more texture in your cake.
Ingredients (for 12 nice slices)
- 4 medium, very ripe bananas, mashed
- 100 g of dark chocolate chips
- 160g crunchy peanut butter
- 80 g of maple syrup
- 160 g of flour
- 10 ml baking powder
- 2.5 ml of salt
- 2 eggs
- 1 handful of dark chocolate chips
Preparation
- Preheat oven to 350°F (180°C).
- Melt the chocolate chips and peanut butter in the microwave or in a double boiler.
- In a bowl, mix the mashed bananas with the melted chocolate and peanut butter.
- Add the maple syrup and eggs, then whisk until smooth.
- Stir in the flour, baking powder and salt using a spatula.
- Finally, add the chocolate chips and mix gently.
- Butter and flour a loaf pan (or spray it with cooking spray). Pour in the mixture. You can place an extra banana, cut in half lengthwise, on top.
- Bake in the middle of the oven for about 45 minutes. Check the cooking with a knife or wooden pick: it should come out dry.
- Let cool for a few minutes before unmolding.
- For a decadent dessert, serve each slice with a scoop of ice cream (vanilla, chocolate, or caramel), a few banana slices, crushed peanuts, and a spoonful of slightly warmed fleur de sel caramel.
