AVOCAT TUNA

Ingredients
- 2 avocados
- 1 can tuna
- ½ red bell pepper, diced
- ½ shallot, chopped
- ½ clove garlic, minced
- 30 ml (2 tbsp.) white balsamic vinegar
- 15 ml (1 tbsp.) mayonnaise
- 4 drops Tabasco
- 250 ml (1 cup) cooked rice
- 60 ml (4 tbsp.) parsley leaves, chopped
- Salt and pepper to taste
Preparation
- Scoop out the avocados, keeping the flesh and skin.
- In a bowl, mash avocado flesh, add crumbled tuna, red bell pepper, shallot, garlic, vinegar, mayonnaise, Tabasco, rice, salt and pepper. Mix and check seasoning.
- Garnish each avocado peel with the prepared mixture.
- Add a little chopped parsley on top.
