Blinis

BLINIS

Ingredients

  • 110 g flour
  • 15 ml (1 tablespoon) sugar
  • 10 ml (2 tsp.) baking powder
  • 2 pinches salt
  • 120 ml (8 tablespoons) milk
  • 1 whole egg
  • 1 egg, white

Preparation

  1. In a bowl, mix flour, sugar, baking powder and a pinch of salt.
  2. In a saucepan, warm the milk.
  3. Separate the yolk from the egg white, keeping the 2 whites together.
  4. Pour the milk over the flour, add the egg yolk and mix well.
  5. In a separate bowl, beat the 2 egg whites with a pinch of salt until stiff.
  6. Gently fold the stiff egg whites into the prepared mixture.
  7. Leave to stand for 15 minutes.
  8. In a hot, non-stick frying pan, lightly oiled or sprinkled with a little Mycryo cocoa butter, place small amounts of dough to form mini-discs.
  9. Let the first side brown, then turn the blini over to cook the other side.
