Chicken bonbon with paprika and cherry tomato

CHICKEN BONBON WITH PAPRIKA AND CHERRY TOMATO

Ingredients

  • 2 chicken breasts
  • 30 ml (2 tbsp.) smoked paprika
  • salt and pepper to taste

Breadcrumbs

  • 250 g (1 cup) flour
  • 2 eggs
  • 60 ml (¼ cup) milk
  • Panko breadcrumbs as needed
  • canola oil for frying
  • 24 cherry tomatoes, halved
  • 24 wooden skewers

Preparation

  1. Preheat oven, rack in center, to 220° C (425° F).
  2. Coat chicken breasts with smoked paprika and a little salt and pepper.
  3. Place on a baking sheet and bake for 10 minutes.
  4. Leave to cool.
  5. Preheat fryer oil to 190° C (375° F).
  6. Arrange a bowl of flour, another bowl of milk and eggs beaten with a fork, and a final bowl of panko breadcrumbs.
  7. Cut each chicken breast into 12 equal cubes, roll them in flour, then pass them through the egg beaten with milk and finally through the Panko breadcrumbs.
  8. Fry the cubes for 2-3 minutes or until golden brown. Place the cubes on absorbent paper.

Assembly

On a wooden skewer, prick a cherry tomato half, add a chicken bonbon and finish with the second cherry tomato half.
