CHICKEN BONBON WITH PAPRIKA AND CHERRY TOMATO

Ingredients
- 2 chicken breasts
- 30 ml (2 tbsp.) smoked paprika
- salt and pepper to taste
Breadcrumbs
- 250 g (1 cup) flour
- 2 eggs
- 60 ml (¼ cup) milk
- Panko breadcrumbs as needed
- canola oil for frying
- 24 cherry tomatoes, halved
- 24 wooden skewers
Preparation
- Preheat oven, rack in center, to 220° C (425° F).
- Coat chicken breasts with smoked paprika and a little salt and pepper.
- Place on a baking sheet and bake for 10 minutes.
- Leave to cool.
- Preheat fryer oil to 190° C (375° F).
- Arrange a bowl of flour, another bowl of milk and eggs beaten with a fork, and a final bowl of panko breadcrumbs.
- Cut each chicken breast into 12 equal cubes, roll them in flour, then pass them through the egg beaten with milk and finally through the Panko breadcrumbs.
- Fry the cubes for 2-3 minutes or until golden brown. Place the cubes on absorbent paper.
Assembly
On a wooden skewer, prick a cherry tomato half, add a chicken bonbon and finish with the second cherry tomato half.
