Tomato and halloumi kebab

TOMATO AND HALLOUMI BROCHETTE

Ingredients

  • 60 ml( ¼ cup) olive oil
  • 2 sprigs thyme, thinly leafed and chopped
  • 1 sprig rosemary, leaves removed and chopped
  • 1 clove garlic, chopped
  • salt and pepper to taste
  • 16 Halloumi cheese cubes, 1ˮx1ˮ in size
  • 16 cherry tomatoes
  • 16 small wooden skewers

Preparation

  1. In a bowl, mix olive oil, thyme, rosemary, garlic, salt and pepper.
  2. Thread a tomato and a cheese cube onto each skewer. Brush with the prepared herb oil mixture.
  3. In a ridged pan over high heat, grill the skewers for 2 minutes on each side.
  4. Season with salt and pepper and enjoy.
