TOMATO AND HALLOUMI BROCHETTE

Ingredients
- 60 ml( ¼ cup) olive oil
- 2 sprigs thyme, thinly leafed and chopped
- 1 sprig rosemary, leaves removed and chopped
- 1 clove garlic, chopped
- salt and pepper to taste
- 16 Halloumi cheese cubes, 1ˮx1ˮ in size
- 16 cherry tomatoes
- 16 small wooden skewers
Preparation
- In a bowl, mix olive oil, thyme, rosemary, garlic, salt and pepper.
- Thread a tomato and a cheese cube onto each skewer. Brush with the prepared herb oil mixture.
- In a ridged pan over high heat, grill the skewers for 2 minutes on each side.
- Season with salt and pepper and enjoy.
