HALLOUMI BROCHETTES
Portions : 4 - Preparation : 15 minutes - Cooking : 10 minutes
Ingredients
- 15 ml (1 tablespoon) mild smoked paprika
- 3 ml (1/2 tsp.) chili flakes
- 1 garlic clove, minced
- 75 ml (5 tbsp.) olive oil
- 60 ml (4 tbsp.) white balsamic vinegar
- 15 ml (1 tbsp.) sugar
- 1 block Halloumi cheese, thickly sliced
- 12 to 16 cherry tomatoes
- 1 red onion, chopped
- Salt and pepper to taste
Parsley salad
- 125 ml (1/2 cup) parsley leaves, chopped
- 125 ml (1/2 cup) coriander leaves, chopped
- 2 garlic cloves, chopped
- ½ lemon, zest
- 125 ml (1/2 cup) olive oil
- Salt and pepper to taste
Preparation
- Preheat barbecue to high.
- In a bowl, mix paprika, chili pepper, garlic, olive oil, balsamic, sugar and a little salt and pepper.
- Roll cheese slices, tomatoes and onion in the mixture.
- Alternate slices of cheese, tomatoes and onion to form skewers.
- Place skewers on barbecue grill and cook for 5 minutes on each side.
- For the persillade, mix parsley, coriander, garlic, lemon zest, olive oil, salt and pepper in a bowl.
- Serve the skewers hot, topped with the prepared parsley.
