Halloumi skewers

HALLOUMI BROCHETTES

Portions : 4 - Preparation : 15 minutes - Cooking : 10 minutes

Ingredients

  • 15 ml (1 tablespoon) mild smoked paprika
  • 3 ml (1/2 tsp.) chili flakes
  • 1 garlic clove, minced
  • 75 ml (5 tbsp.) olive oil
  • 60 ml (4 tbsp.) white balsamic vinegar
  • 15 ml (1 tbsp.) sugar
  • 1 block Halloumi cheese, thickly sliced
  • 12 to 16 cherry tomatoes
  • 1 red onion, chopped
  • Salt and pepper to taste

Parsley salad

  • 125 ml (1/2 cup) parsley leaves, chopped
  • 125 ml (1/2 cup) coriander leaves, chopped
  • 2 garlic cloves, chopped
  • ½ lemon, zest
  • 125 ml (1/2 cup) olive oil
  • Salt and pepper to taste

Preparation

  1. Preheat barbecue to high.
  2. In a bowl, mix paprika, chili pepper, garlic, olive oil, balsamic, sugar and a little salt and pepper.
  3. Roll cheese slices, tomatoes and onion in the mixture.
  4. Alternate slices of cheese, tomatoes and onion to form skewers.
  5. Place skewers on barbecue grill and cook for 5 minutes on each side.
  6. For the persillade, mix parsley, coriander, garlic, lemon zest, olive oil, salt and pepper in a bowl.
  7. Serve the skewers hot, topped with the prepared parsley.
