Fajita skewers

Ingredients

  • 4 cloves garlic, minced
  • 15 ml (1 tbsp) sweet smoked paprika
  • 15 ml (1 tbsp) cumin, ground
  • 125 ml (1/2 cup) coriander leaves, chopped
  • 1 lemon, juice
  • 2 limes, juice
  • 15 ml (1 tbsp) honey
  • 120 ml (8 tbsp) olive oil
  • 1 jalapenos, membranes and seeds removed, chopped
  • 3 Quebec chicken breasts, cubed
  • 1 green pepper, cubed
  • 1 red pepper, cubed
  • 1 red onion, quartered
  • 4 to 8 tortillas
  • Salt and pepper to taste

The filling

  • Sour cream
  • Mango, cubed
  • Tomatoes, sliced
  • etc...

Preparation

  1. Preheat the barbecue to the maximum.
  2. In a bowl, mix the garlic, paprika, cumin, coriander, lemon and lime juice, honey, olive oil, jalapenos, salt and pepper.
  3. Add the chicken cubes to the prepared mixture and marinate for at least 4 hours and up to 24 hours.
  4. On skewers, form skewers by alternating chicken, red pepper, green pepper and onion.
  5. On the barbecue grill, in direct cooking, cook and brown the skewers, 4 minutes on each side.
  6. If the chicken cubes are not yet cooked, continue in indirect cooking, with the lid closed, for a few minutes.
  7. Warm the tortillas on the barbecue or in a frying pan and garnish them with a skewer of meat
  8. Add a little sour cream, mango cubes, tomato slices and other ingredients of your choice
