Cauliflower, broccoli, bacon and cheese casserole au gratin

CAULIFLOWER, BROCCOLI, BACON AND CHEESE CASSOLETTE AU GRATIN

Portions : 4 - Preparation time : 15 minutes - Cooking time : 25 minutes

Ingredients

  • ½ cauliflower, cut into small pieces
  • ½ broccoli, cut into small pieces
  • 1 red onion, sliced into rings
  • 2 sprigs thyme, leaves removed
  • 2 garlic cloves, chopped
  • 60 ml (4 tbsp.) olive oil
  • 8 slices bacon, crisp and chopped
  • 500 ml (2 cups) Cracker Barrel Mozza cheese
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200° C (400° F).
  2. In a bowl, combine cauliflower, broccoli, onion, garlic, olive oil and thyme.
  3. Place the mixture on an ovenproof tray lined with parchment paper or a silicone mat, and bake for 20 minutes.
  4. Remove from the oven, add the bacon and divide between 4 small casseroles or ramekins.
  5. Cover with cheese and broil for 5 minutes.
