CAULIFLOWER, BROCCOLI, BACON AND CHEESE CASSOLETTE AU GRATIN
Portions : 4 - Preparation time : 15 minutes - Cooking time : 25 minutes
Ingredients
- ½ cauliflower, cut into small pieces
- ½ broccoli, cut into small pieces
- 1 red onion, sliced into rings
- 2 sprigs thyme, leaves removed
- 2 garlic cloves, chopped
- 60 ml (4 tbsp.) olive oil
- 8 slices bacon, crisp and chopped
- 500 ml (2 cups) Cracker Barrel Mozza cheese
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200° C (400° F).
- In a bowl, combine cauliflower, broccoli, onion, garlic, olive oil and thyme.
- Place the mixture on an ovenproof tray lined with parchment paper or a silicone mat, and bake for 20 minutes.
- Remove from the oven, add the bacon and divide between 4 small casseroles or ramekins.
- Cover with cheese and broil for 5 minutes.
