JAM CLAFOUTIS

Ingredients
- 2 eggs
- 80 ml (1/3 cup) sugar
- 45 ml (3 tablespoons) flour
- 60 ml (4 tablespoons) almond powder
- 1 pinch salt
- 1 lemon, zest
- 1 vanilla pod, seeds
- 60 ml (4 tbsp) milk
- 125 ml (1/2 cup) 35% cream
- 120 ml (8 tbsp.) jam with pieces
Preparation
- Preheat the BBQ to 200°C (400°F).
- In a bowl, whisk together sugar and eggs until pale.
- Stir in flour, almond powder, salt, zest and vanilla.
- When the mixture is smooth, stir in the milk and cream.
- Pour the mixture into small individual oven- or BBQ-safe ramekins, filling them ¾ full (small aluminum containers work well).
- Spread the jam over the top of the ramekins.
- Place the ramekins on the BBQ grill and cook for around 15 minutes over indirect heat, with the lid closed. The mixture should be firm at the end of cooking.
