Lamb Couscous Express

EXPRESS LAMB COUSCOUS

Portions : 4 - Preparation : 15 minutes - Cooking time : 55 to 60 minutes

Ingredients

  • 600 g (20 ½ oz) lamb cubes
  • 60 ml (4 tablespoons) olive oil
  • 1 onion, chopped
  • 250 ml (1 cup) turnips, cubed
  • 250 ml (1 cup) carrots, cubed
  • 2 garlic cloves, chopped
  • 30 ml (2 tbsp.) paprika
  • 30 ml (2 tbsp.) ground cumin
  • 30 ml (2 tbsp.) ground coriander
  • 15 ml (1 tbsp) honey
  • 5 ml (1 tsp.) harissa sauce
  • 2 l (8 cups) broth
  • 250 ml (1 cup) zucchini, cubed
  • 500 ml (2 cups) couscous seeds
  • 500 ml water, boiling
  • salt and pepper to taste

Preparation

  1. In a hot saucepan, brown lamb cubes in olive oil.
  2. Add onion, turnip, carrot, garlic, paprika, cumin, coriander, honey, harissa sauce, stock, salt and pepper.
  3. Cook over medium heat for 30 to 40 minutes. Add the zucchinis and cook for a further 10 minutes, then check the seasoning.
  4. Meanwhile, in a bowl containing the couscous seeds, pour 500 ml (2 cups) of boiling water, cover with cling film and leave to swell for 10 minutes.
  5. Season with salt and crumble with a fork.
  6. Divide the couscous seeds between the plates, arrange the vegetables and meat cubes on top and drizzle with the cooking juices.
