EXPRESS LAMB COUSCOUS
Portions : 4 - Preparation : 15 minutes - Cooking time : 55 to 60 minutes
Ingredients
- 600 g (20 ½ oz) lamb cubes
- 60 ml (4 tablespoons) olive oil
- 1 onion, chopped
- 250 ml (1 cup) turnips, cubed
- 250 ml (1 cup) carrots, cubed
- 2 garlic cloves, chopped
- 30 ml (2 tbsp.) paprika
- 30 ml (2 tbsp.) ground cumin
- 30 ml (2 tbsp.) ground coriander
- 15 ml (1 tbsp) honey
- 5 ml (1 tsp.) harissa sauce
- 2 l (8 cups) broth
- 250 ml (1 cup) zucchini, cubed
- 500 ml (2 cups) couscous seeds
- 500 ml water, boiling
- salt and pepper to taste
Preparation
- In a hot saucepan, brown lamb cubes in olive oil.
- Add onion, turnip, carrot, garlic, paprika, cumin, coriander, honey, harissa sauce, stock, salt and pepper.
- Cook over medium heat for 30 to 40 minutes. Add the zucchinis and cook for a further 10 minutes, then check the seasoning.
- Meanwhile, in a bowl containing the couscous seeds, pour 500 ml (2 cups) of boiling water, cover with cling film and leave to swell for 10 minutes.
- Season with salt and crumble with a fork.
- Divide the couscous seeds between the plates, arrange the vegetables and meat cubes on top and drizzle with the cooking juices.
