S'more chocolate cream

CREAMY CHOCOLATE S'MORE

Portions : 4 - Preparation : 15minutes - Cooking : 10minutes

Ingredients

  • 125 g (4 1/2 oz) Cacao Barry Venezuela Pure Origin 72% cocoa chocolate
  • 125 ml (1/2 cup) 35% cream
  • 125 ml (1/2 cup) 2% milk
  • 1 orange, zest
  • 1 pinch salt
  • 3 egg yolks
  • 45 ml (3 tbsp.) sugar
  • 8 marshmallows
  • 4 graham crackers, crushed

Preparation

  1. Melt the chocolate in a double boiler.
  2. In a saucepan, bring the cream, milk, zest and salt to the boil.
  3. In a bowl, whisk together the eggs and sugar.
  4. Gradually stir the hot liquid into the egg-sugar mixture.
  5. Pour the mixture into the saucepan and, while stirring, let it cook until it reaches 85° C (150° F).
  6. Fold the resulting mixture into the chocolate and whisk vigorously until smooth and glossy.
  7. Fill serving jars with the mixture. Refrigerate for 4 hours.
  8. Just before serving, spread the crushed cookie over the top and place 2 marshmallows on each cream.
  9. Using a blowtorch, lightly burn the marshmallows.
