BLACK PUDDING AND CARAMELIZED APPLE CROUTONS

Ingredients
- 2 firm apples
- 30 ml (2 tablespoons) butter
- 30 ml (2 tablespoons) sugar
- 16 ½" thick black pudding rounds
- 15 ml (1 tablespoon) Mycryo cocoa butter or other fatty substance
- Salt and pepper to taste
- 16 bread croutons
Preparation
- Cut the apples into half-inch-thick slices.
- Using a round cookie cutter, cut the apple slices into rounds the same size as the boudin rounds.
- In a hot frying pan, in melted butter, sear the apple slices on both sides. Sprinkle sugar over the top and allow to caramelize slightly. Set aside.
- Coat boudin slices with Mycryo cocoa butter.
- In a fat-free frying pan, over high heat, brown the boudin slices on both sides.
Assembly
Place a slice of caramelized apple on each crouton, followed by a slice of grilled blood sausage. Season with salt and pepper and enjoy.
