Ingredients

  • 2 firm apples
  • 30 ml (2 tablespoons) butter
  • 30 ml (2 tablespoons) sugar
  • 16 ½" thick black pudding rounds
  • 15 ml (1 tablespoon) Mycryo cocoa butter or other fatty substance
  • Salt and pepper to taste

  4. Coat boudin slices with Mycryo cocoa butter.
  5. In a fat-free frying pan, over high heat, brown the boudin slices on both sides.

Assembly

Place a slice of caramelized apple on each crouton, followed by a slice of grilled blood sausage. Season with salt and pepper and enjoy.
