VEGETABLE FAJITAS

Ingredients
- 1 onion, chopped
- 45 ml (3 tablespoons) olive oil
- 2 garlic cloves, chopped
- 15 ml (1 tbsp.) paprika
- 8 ml (1/2 tbsp.) cumin
- Cayenne pepper to taste
- 1 bell bell pepper, sliced
- 250 ml (1 cup) chickpeas, cooked and drained
- 250 ml (1 cup) kidney beans, cooked and drained
- 8 ml (1/2 tbsp.) sugar
- 30 ml (2 tbsp.) red wine vinegar
- 4 8' wheat tortillas
- 60 ml (4 tbsp.) sour cream
- ½ bunch cilantro, thinly leafed and chopped
- 1 avocado, cubed
- 500 ml (2 cups) Cheddar cheese, grated
- Salt and pepper to taste
Preparation
- In a skillet, sauté the onion in olive oil for a few minutes. Add garlic and spices. Cook for 2 minutes.
- Then add the bell bell pepper, chickpeas, kidney beans, sugar and wine vinegar. Cook for 15 minutes over low heat and check the seasoning.
- Heat the tortillas in the microwave for 20 seconds.
- Top each tortilla with sour cream, a sprinkling of fresh cilantro, the prepared vegetable filling, a few pieces of avocado and grated cheese.
- Roll up and enjoy.
