Vegetable Fajitas

VEGETABLE FAJITAS

Portions : 4 - Preparation : 20 minutes - Cooking : 20 minutes

Ingredients

  • 1 onion, chopped
  • 45 ml (3 tablespoons) olive oil
  • 2 garlic cloves, chopped
  • 15 ml (1 tbsp.) paprika
  • 8 ml (1/2 tbsp.) cumin
  • Cayenne pepper to taste
  • 1 bell bell pepper, sliced
  • 250 ml (1 cup) chickpeas, cooked and drained
  • 250 ml (1 cup) kidney beans, cooked and drained
  • 8 ml (1/2 tbsp.) sugar
  • 30 ml (2 tbsp.) red wine vinegar
  • 4 8' wheat tortillas
  • 60 ml (4 tbsp.) sour cream
  • ½ bunch cilantro, thinly leafed and chopped
  • 1 avocado, cubed
  • 500 ml (2 cups) Cheddar cheese, grated
  • Salt and pepper to taste

Preparation

  1. In a skillet, sauté the onion in olive oil for a few minutes. Add garlic and spices. Cook for 2 minutes.
  2. Then add the bell bell pepper, chickpeas, kidney beans, sugar and wine vinegar. Cook for 15 minutes over low heat and check the seasoning.
  3. Heat the tortillas in the microwave for 20 seconds.
  4. Top each tortilla with sour cream, a sprinkling of fresh cilantro, the prepared vegetable filling, a few pieces of avocado and grated cheese.
  5. Roll up and enjoy.
