CHICKEN FAJITAS, AVOCADO, SOUR CREAM

Ingredients
- 4 Québec chicken breasts, thinly sliced
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 1 onion, chopped
- 2 garlic cloves, chopped
- 15 ml (1 tbsp.) ground cumin seeds
- 5 ml (1 tsp.) sweet paprika
- 1 pinch cayenne pepper
- 15 ml (1 tbsp.) mild chili powder
- 1 chicken stock cube
- 125 ml (1/2 cup) water
- 8 fajita patties
- 2 avocados, sliced
- 250 ml (1 cup) Mozzarella, grated
- 250 ml (1 cup) sour cream
- 125 ml (1/2 cup) coriander leaves, chopped
- salt and freshly ground pepper to taste
Preparation
- In a hot skillet, brown the chicken slices, coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side.
- Add the onion, garlic, cumin, paprika, cayenne pepper, chili powder, chicken stock cube and water and simmer for 5 minutes. Check seasoning.
- Top each patty with the prepared mixture, avocado slices, cheese, cream and fresh coriander.
