Chicken, avocado and sour cream fajitas

CHICKEN FAJITAS, AVOCADO, SOUR CREAM

Ingredients

  • 4 Québec chicken breasts, thinly sliced
  • 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 15 ml (1 tbsp.) ground cumin seeds
  • 5 ml (1 tsp.) sweet paprika
  • 1 pinch cayenne pepper
  • 15 ml (1 tbsp.) mild chili powder
  • 1 chicken stock cube
  • 125 ml (1/2 cup) water
  • 8 fajita patties
  • 2 avocados, sliced
  • 250 ml (1 cup) Mozzarella, grated
  • 250 ml (1 cup) sour cream
  • 125 ml (1/2 cup) coriander leaves, chopped
  • salt and freshly ground pepper to taste

Preparation

  1. In a hot skillet, brown the chicken slices, coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side.
  2. Add the onion, garlic, cumin, paprika, cayenne pepper, chili powder, chicken stock cube and water and simmer for 5 minutes. Check seasoning.
  3. Top each patty with the prepared mixture, avocado slices, cheese, cream and fresh coriander.
