CHEESE AND SWEET ONION PUFF PASTRY
Portions : 4 to 6 - Preparation : 20 minutes - Cooking : 30 minutes
Ingredients
- 2 onions, chopped
- 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 1 garlic clove, crushed
- 1 jalapeno pepper, chopped
- 45 ml (3 tbsp.) sugar
- ½ bottle russet beer
- 8 slices bacon, cooked crisp, chopped
- 1 pure butter puff pastry (store-bought)
- 500 ml (2 cups) shredded Double Cheddar CRAKER BARREL mix
- 45 ml (3 tbsp.) unsalted butter, melted
- Salt and pepper to taste
Preparation
- In a hot skillet, sauté the onion for a few minutes in the chosen fat. Add the garlic, jalapenos, sugar and beer and reduce to dryness.
- Add the bacon, check the seasoning with salt and pepper and leave to cool.
- Preheat oven, rack in center, to 200° C (400° F).
- On a lightly floured work surface, roll out the puff pastry. Cut into 2" x 2" squares.
- Fill the center of each square with the prepared mixture and cheese, fold in the corners and place on an ovenproof baking sheet.
- Bake for 20 minutes, until golden brown.
