Sweet and sour pork tenderloin

SWEET AND SOUR PORK TENDERLOIN

INGREDIENTS

  • 1 1/2 lb Pork tenderloin 750 g
  • 1/2 cup Cornstarch 125 ml
  • 3 tbsp Vegetable oil 45 ml
  • 1/2 tsp. Salt 2 ml
  • 3 Green onions, sliced 3
  • 1 tbsp Fresh ginger, thinly sliced 15 ml
  • 2 tsp Garlic, chopped 10 ml
  • 1 tsp Soy sauce 5 ml
  • 3 tbsp Rice vinegar 45 ml
  • 1 tbsp Ketchup 15 ml
  • 6 tbsp Sugar 90 ml 1/6 oz
  • Agar-agar (seaweed gelling agent)5 g
  • 1/3 oz Chrysanthemum, oak leaf, lamb's lettuce or arugula sprouts10 g

PREPARATION

  1. Cut pork tenderloin into very thin slices and coat with a little cornstarch, shaking off excess.
  2. Heat vegetable oil in a frying pan over medium-high heat and cook meat slices until golden. Season with salt and set aside on a plate.
  3. In the same skillet, combine green onions, ginger, garlic, soy sauce, vinegar, ketchup and sugar. Bind with a little cornstarch and agar-agar. Divide meat among plates.
  4. Top with sauce and garnish with selected sprouts.
