Financier with almonds and cherries

ALMOND AND CHERRY FINANCIER

Output: 20 to 30 - Preparation time: 15 minutes - Cooking time: 15 minutes

Ingredients

  • 125 ml (1/2 cup) flour
  • 190 ml (3/4 cup) sugar
  • 190 ml (3/4 cup) almond powder
  • 1 pinch salt
  • 6 eggs, whites
  • 125 ml (1/2 cup) unsalted butter, melted
  • 90 ml (1/3 cup) canola oil
  • 125 ml (1/2 cup) cherries, chopped
  • 15 ml (1 tablespoon) dark rum

Preparation

  1. Using a hand mixer, combine all the dry ingredients, then fold in the egg whites.
  2. Then add the melted butter, oil, cherry pieces and rum. Mix until smooth.
  3. Cover with cling film and refrigerate for 2 hours.
  4. Preheat oven, rack in center, to 180° C (350° F).
  5. Pour the mixture into small buttered silicone or standard molds and bake for around 15 minutes. Baking time may vary according to oven and type of molds used.
  6. Turn out once slightly cooled.
