GENERAL TAO AT THE BBQ

Portions : 4 - Preparation : 10 minutes - Cooking : 15 minutes

Ingredients

Marinade

  • 4 chicken breasts, cut into thick strips
  • 2 red peppers, cut into large chunks
  • 1 onion, coarsely chopped
  • 45 ml (3 tbsp.) sesame oil
  • 30 ml (2 tbsp.) Sambal Oelek
  • 30 ml (2 tbsp.) fresh ginger, chopped
  • 2 garlic cloves, chopped
  • 30 ml (2 tbsp.) soy sauce
  • 30 ml (2 tbsp.) canola oil
  • 30 ml (2 tbsp) rice vinegar
  • Pepper to taste

Sauce

  • 250 ml (1 cup) sugar
  • 30 ml (2 tbsp.) Sambal Oelek
  • 30 ml (2 tbsp.) sesame oil
  • 45 ml (3 tbsp.) sesame seeds
  • 30 ml (2 tbsp.) fresh ginger, chopped
  • 60 ml (4 tbsp.) rice vinegar
  • 2 garlic cloves, chopped
  • 30 ml (2 tbsp.) soy sauce
  • 15 ml (1 tbsp.) tomato paste
  • 15 ml (1 tbsp) sweet paprika
  • 30 ml (2 tbsp) hoisin sauce
  • 250 ml (1 cup) water
  • Pepper to taste

Preparation

  1. In a bowl, combine all marinade ingredients and chicken. Marinate for 15 minutes.
  2. Alternate chicken strips, onions and peppers to form skewers. Discard remaining marinade.
  3. Preheat bbq on high.
  4. Sear the skewers for 2 minutes on each side. Then finish cooking over indirect heat, turning off the heat under the skewers, leaving the burner on the other side at maximum, and closing the lid. Leave to cook for 7 to 8 minutes.
  5. Meanwhile, heat all the sauce ingredients in a saucepan.
  6. Boil until the sauce is thick and syrupy.
  7. Check the seasoning and brush the skewers with the sauce as they come out of the bbq.
