Egg-free sponge cake

INGREDIENTS

  • 200 g flour
  • 100 g sugar
  • 50 g butter
  • 1 pinch salt
  • 200 ml cream
  • 100 ml milk
  • 2 tsp baking powder

PREPARATION

  1. Preheat oven to 350°F or 180°C.
  2. Whisk together sugar, flour, salt and baking powder in a bowl.
  3. Melt the chopped butter in a small saucepan with the milk until it boils. Remove from the heat and add the cream.
  4. Pour this mixture into the dry ingredients and stir. Once the mixture is homogeneous, pour it onto a baking tray lined with baking paper and, using a metal spatula, gently spread.
  5. Bake for 15-20 min.
  6. Allow to cool before handling, as you may break it.
