Ingredients
Potato waffle
- 500 ml (2 cups) cooked mashed potatoes
- 2 eggs
- 30 ml (2 tablespoons) melted butter
- 125 ml (1/2 cup) all-purpose flour
- 15 ml (1 tablespoon) baking powder
- Salt and pepper to taste
Sauce
- 500 ml (2 cups) water
- 1 pinch herbes de Provence blend
- 2 beef bouillon cubes
- 60 ml (4 tbsp.) butter
- 30 ml (2 tbsp.) balsamic vinegar
- Salt and pepper to taste
Topping
- Qs cheese curds
- 60 ml (4 tbsp.) bacon bits
Preparation
- Preheat waffle iron.
- In a bowl, combine mashed potatoes, eggs, butter, salt and pepper.
- Gradually stir in flour and baking powder.
- Place a portion of the mixture in the waffle iron at medium power and allow to brown for 6 minutes.
- In a saucepan, bring the water, herbes de Provence and bouillon cubes to the boil.
- In another saucepan, melt the butter, stir in the flour and cook for 1 minute.
- While whisking, gradually stir in the hot stock. Check the seasoning.
- Place a waffle on each plate, then spread the cheese curds, prepared sauce and bacon bits.
