Poutine waffle

Ingredients

Potato waffle

  • 500 ml (2 cups) cooked mashed potatoes
  • 2 eggs
  • 30 ml (2 tablespoons) melted butter
  • 125 ml (1/2 cup) all-purpose flour
  • 15 ml (1 tablespoon) baking powder
  • Salt and pepper to taste

Sauce

  • 500 ml (2 cups) water
  • 1 pinch herbes de Provence blend
  • 2 beef bouillon cubes
  • 60 ml (4 tbsp.) butter
  • 30 ml (2 tbsp.) balsamic vinegar
  • Salt and pepper to taste

Topping

  • Qs cheese curds
  • 60 ml (4 tbsp.) bacon bits

Preparation

  1. Preheat waffle iron.
  2. In a bowl, combine mashed potatoes, eggs, butter, salt and pepper.
  3. Gradually stir in flour and baking powder.
  4. Place a portion of the mixture in the waffle iron at medium power and allow to brown for 6 minutes.
  5. In a saucepan, bring the water, herbes de Provence and bouillon cubes to the boil.
  6. In another saucepan, melt the butter, stir in the flour and cook for 1 minute.
  7. While whisking, gradually stir in the hot stock. Check the seasoning.
  8. Place a waffle on each plate, then spread the cheese curds, prepared sauce and bacon bits.
