HAM WITH COUREUR DES BOIS, BACON AND FRITTATA WITH SAUTÉED VEGETABLES

Ingredients
- 2 slices cooked Québec ham, 1" thick, cubed
- 12 slices Québec bacon
- 100 ml (2/5 cup) Coureur des Bois
- 125 ml (1/2 cup) red bell pepper, diced
- 250 ml (1 cup) zucchini, diced
- 500 ml (2 cups) fresh spinach leaves
- 6 eggs
- 60 ml (4 tbsp.) milk
- 15 ml (1 tbsp) baking powder
- 250 ml (1 cup) cheddar cheese, grated
- 125 ml (1/2 cup) parsley, chopped
- 90 ml (6 tbsp) olive oil
- Salt and pepper to taste
Preparation
- In a frying pan over high heat, in a little olive oil, brown the ham cubes for 3 minutes.
- Season, add the Coureur des Bois, stir and reduce for a few minutes. Set aside off the heat.
- In a new frying pan, in a little olive oil, brown the diced bell pepper and zucchini.
- Then add the spinach. Season and set aside.
- In a bowl, beat the eggs, milk and baking powder. Add vegetables, cheese, parsley, ham cubes and check seasoning.
- In a large frying pan, in a little olive oil, cook the egg mixture over medium heat.
- Meanwhile, in another frying pan, cook the bacon until crisp and serve with the Frittata.
