Ham with coureur des bois, bacon and frittata with sautéed vegetables

HAM WITH COUREUR DES BOIS, BACON AND FRITTATA WITH SAUTÉED VEGETABLES

Portions : 4 - Preparation : 15 minutes - Cooking time : 15 to 20 minutes

Ingredients

  • 2 slices cooked Québec ham, 1" thick, cubed
  • 12 slices Québec bacon
  • 100 ml (2/5 cup) Coureur des Bois
  • 125 ml (1/2 cup) red bell pepper, diced
  • 250 ml (1 cup) zucchini, diced
  • 500 ml (2 cups) fresh spinach leaves
  • 6 eggs
  • 60 ml (4 tbsp.) milk
  • 15 ml (1 tbsp) baking powder
  • 250 ml (1 cup) cheddar cheese, grated
  • 125 ml (1/2 cup) parsley, chopped
  • 90 ml (6 tbsp) olive oil
  • Salt and pepper to taste

Preparation

  1. In a frying pan over high heat, in a little olive oil, brown the ham cubes for 3 minutes.
  2. Season, add the Coureur des Bois, stir and reduce for a few minutes. Set aside off the heat.
  3. In a new frying pan, in a little olive oil, brown the diced bell pepper and zucchini.
  4. Then add the spinach. Season and set aside.
  5. In a bowl, beat the eggs, milk and baking powder. Add vegetables, cheese, parsley, ham cubes and check seasoning.
  6. In a large frying pan, in a little olive oil, cook the egg mixture over medium heat.
  7. Meanwhile, in another frying pan, cook the bacon until crisp and serve with the Frittata.
