Vegan MC and cheese

VEGAN MC AND CHEESE

Portions : 4 - Preparation : 65 minutes - Cooking : 10 minutes

Ingredients

  • 250 ml (1 cup) cashews, unsalted
  • 1 l (4 cups) cooked potatoes, cubed
  • 125 ml (1/2 cup) canola oil
  • 15 ml (1 tablespoon) malt yeast
  • 30 ml (2 tablespoons) lemon juice
  • 4 portions macaroni pasta
  • salt and pepper to taste

Preparation

  1. Soak cashews for one hour in a large volume of water. Then drain.
  2. Meanwhile, cook macaroni according to manufacturer's instructions. Drain pasta.
  3. In the bowl of a food processor, blend cashews, potatoes, oil, malted yeast, lemon juice, salt and pepper. Check the seasoning of this vegan cheese.
  4. Add the prepared vegan cheese to the macaroni dish.
