MINI HOEGAARDEN BEER HAM QUICHE
Output: 12 units - Preparation time: 10 minutes - Cooking time: 45 to 50 minutes
Ingredients
- 4 eggs
- 125 ml (1/2 cup) milk
- 125 ml (1/2 cup) 35% cream
- 30 ml (2 tablespoons) parsley, chopped
- 2 slices ham, 1" thick
- 15 ml (1 tbsp.) canola oil
- 15 ml (1 tbsp.) brown sugar
- ½ bottle Hoegaarden beer
- 1 homemade or store-bought shortcrust pastry
- 125 ml (1/2 cup) grated Gruyère cheese
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 180° C (350° F).
- In a bowl, whisk together eggs, milk, cream, parsley, salt and pepper.
- In a hot skillet, brown ham slices in canola oil for 3 minutes on each side. Sprinkle with brown sugar and deglaze with beer. Allow to reduce to dryness, then cool. Cut ham into small cubes.
- Cut out the shortcrust pastry with a round cookie cutter, the size of mini cupcake molds. Place the pastry rounds in the bottom of the molds. Divide the ham between them and fill with the prepared mixture. Garnish with grated cheese.
- Bake for 30 minutes until cooked through.
