Mussels à la Basquaise

MUSSELS À LA BASQUAISE

Ingredients

  • 1 shallot, chopped
  • 3 garlic cloves, chopped
  • 30 ml (2 tablespoons) olive oil
  • 1 red bell pepper, diced
  • 3 tomatoes, diced
  • 15 ml (1 tbsp.) Espelette pepper
  • 2 bags mussels, cleaned
  • 250 ml (1 cup) dry white wine
  • 1 lemon, (4 tbsp.) quartered

Preparation

  1. In a hot saucepan, sauté the shallot and garlic in olive oil for 1 minute. Add the bell pepper, tomatoes and Espelette pepper and sauté for a further 1 minute.
  2. Add the mussels and mix well. Add the white wine, cover and cook over medium heat for 7 to 8 minutes. Shake the pan to mix again.
  3. Divide the mussels between the plates and add a lemon wedge.
