MUSSELS À LA BASQUAISE

Ingredients
- 1 shallot, chopped
- 3 garlic cloves, chopped
- 30 ml (2 tablespoons) olive oil
- 1 red bell pepper, diced
- 3 tomatoes, diced
- 15 ml (1 tbsp.) Espelette pepper
- 2 bags mussels, cleaned
- 250 ml (1 cup) dry white wine
- 1 lemon, (4 tbsp.) quartered
Preparation
- In a hot saucepan, sauté the shallot and garlic in olive oil for 1 minute. Add the bell pepper, tomatoes and Espelette pepper and sauté for a further 1 minute.
- Add the mussels and mix well. Add the white wine, cover and cook over medium heat for 7 to 8 minutes. Shake the pan to mix again.
- Divide the mussels between the plates and add a lemon wedge.
