Chocolate mousse

CHOCOLATE MOUSSE

Portions : 4 - Preparation time : 35 minutes

Ingredients

  • 250 ml (1 cup) Ocoa Cacao Barry dark chocolate
  • 125 ml (1/2 cup) 35% cream
  • 4 eggs, whites and yolks separated
  • 1 pinch salt
  • 60 ml (4 tablespoons) sugar
  • 15 ml (1 tablespoon) Grand Marnier

Preparation

  1. In a double boiler, melt the chocolate in the cream.
  2. Meanwhile, in a bowl, using a hand mixer or whisk, beat the egg whites with the pinch of salt until stiff.
  3. In another bowl, using a hand mixer or whisk, beat the egg yolks, then add the sugar and Grand Marnier.
  4. Fold the chocolate into the egg yolk mixture. Gently fold in the egg whites with a spatula.
  5. Fill jars or verrines. Refrigerate for 4 hours before serving, and decorate as required.
