CHOCOLATE MOUSSE
Portions : 4 - Preparation time : 35 minutes
Ingredients
- 250 ml (1 cup) Ocoa Cacao Barry dark chocolate
- 125 ml (1/2 cup) 35% cream
- 4 eggs, whites and yolks separated
- 1 pinch salt
- 60 ml (4 tablespoons) sugar
- 15 ml (1 tablespoon) Grand Marnier
Preparation
- In a double boiler, melt the chocolate in the cream.
- Meanwhile, in a bowl, using a hand mixer or whisk, beat the egg whites with the pinch of salt until stiff.
- In another bowl, using a hand mixer or whisk, beat the egg yolks, then add the sugar and Grand Marnier.
- Fold the chocolate into the egg yolk mixture. Gently fold in the egg whites with a spatula.
- Fill jars or verrines. Refrigerate for 4 hours before serving, and decorate as required.
