Milk chocolate mousse Halles d'Anjou

MILK CHOCOLATE MOUSSE

Portions : 4 - Preparation time : 25 minutes - Chilling time : 4 hours - Cooking time : about 10 minutes

Ingredients

  • 250 ml (1 cup) milk chocolate
  • 125 ml (1/2 cup) 35% cream
  • 4 eggs, whites and yolks separated
  • 1 pinch salt
  • 45 ml (3 tablespoons) sugar

Preparation

  1. In a double boiler, melt the chocolate in the cream.
  2. Meanwhile, in a bowl, using a hand mixer or wire whisk, beat the egg whites and pinch of salt until stiff.
  3. In another bowl, using a hand mixer or whisk attachment, whip the egg yolks, then fold in the sugar.
  4. Add the chocolate to the egg yolk mixture.
  5. Using a spatula, gently fold in the egg whites.
  6. Fill jars or verrines and chill in the fridge for 4 hours before serving and decorating.
