CARAMELIZED NUTS WITH SPICES
Output : 3 cups

Ingredients
- 750 ml (3 cups) walnuts
- 3 egg whites
- 125 ml (1 cup) sugar
- 30 ml (2 tablespoons) spices to taste
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 220°C (425°F).
- In the bowl of a mixer, whip the egg whites until stiff. When stiff, fold in the sugar.
- In a bowl, add the walnuts to the egg whites, followed by the spices of your choice.
- On a baking sheet lined with a silicone mat, spread the mixture and bake until caramelized. For even caramelization, stir the mixture a few times during baking.
Spice blend options:
- Mild smoked paprika, cayenne pepper, salt and pepper
- Ground cumin, ground coriander, paprika, salt and pepper
- Chopped thyme and rosemary, garlic powder, salt and pepper
- Dry mustard, thyme, salt and pepper
