Caramelized walnuts with spices

CARAMELIZED NUTS WITH SPICES

Output : 3 cups

Preparation time: 5 minutes - Cooking time: 10 to 15 minutes

Ingredients

  • 750 ml (3 cups) walnuts
  • 3 egg whites
  • 125 ml (1 cup) sugar
  • 30 ml (2 tablespoons) spices to taste
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 220°C (425°F).
  2. In the bowl of a mixer, whip the egg whites until stiff. When stiff, fold in the sugar.
  3. In a bowl, add the walnuts to the egg whites, followed by the spices of your choice.
  4. On a baking sheet lined with a silicone mat, spread the mixture and bake until caramelized. For even caramelization, stir the mixture a few times during baking.

Spice blend options:

  • Mild smoked paprika, cayenne pepper, salt and pepper
  • Ground cumin, ground coriander, paprika, salt and pepper
  • Chopped thyme and rosemary, garlic powder, salt and pepper
  • Dry mustard, thyme, salt and pepper
  • Espelette pepper, lemon zest, salt and pepper
