Pasta dough

Pâtes fraîches

Ingredients

  • 250 g (1 3/4 cups) all-purpose flour
  • 2 eggs
  • 30 ml (2 tbsp) olive oil
  • 30 ml (2 tbsp) water (if needed)
  • 1 pinch of salt

Preparation

  1. In a bowl, mix the flour and salt.
  2. Add the eggs and olive oil.
  3. Mix with a fork or by hand until you get a smooth dough.
  4. If the dough is too dry, add a little water.
  5. Knead by hand for a few minutes until you get a smooth and supple dough.
  6. Let rest for 30 minutes before rolling out with a rolling pin or pasta machine.
