Smoked salmon ricotta basket

SMALL RICOTTA BASKET SMOKED SALMON

Portions : 4 - Preparation : 20 minutes - Cooking : 20 minutes

Ingredients

  • 1 sheet puff pastry
  • 250 ml (1 cup) ricotta
  • 250 ml (1 cup) smoked salmon, chopped
  • 30 ml (2 tbsp.) capers, chopped
  • 60 ml (4 tbsp.) chives, chopped
  • 1 egg yolk, beaten with a little water
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. On a work surface, roll out the puff pastry.
  3. Using a knife, cut the dough into 3" x 3" squares.
  4. In a bowl, combine the ricotta, salmon, chives and capers. Check seasoning.
  5. Place a rounded spoonful of the mixture in the center of each square.
  6. Fold in 2 sides of each square to form a small basket and brush with egg.
  7. Bake for 20 minutes.
