JALAPENOS TOPPED WITH FRESH GOAT'S CHEESE AND HERBS

Ingredients
- 125 ml (1/2 cup) fresh goat cheese
- 8 mint leaves, chopped
- 1 garlic clove, chopped
- 45 ml (3 tbsp.) honey
- 30 ml (2 tbsp.) chives
- 12 jalapenos
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a bowl, combine fresh goat's cheese, mint, garlic, honey, chives, salt and pepper. Check seasoning.
- Cut peppers in half, remove seeds and all white membranes.
- Garnish the peppers with the prepared mixture.
- On a baking sheet lined with parchment paper or a silicone mat, arrange the chillies and bake for 20 minutes.
