TURKEY BREAST STUFFED WITH CHESTNUTS

Ingredients
- 250 ml (1 cup) ground pork
- 150 ml (10 tablespoons) 35% cream
- 1 French shallot
- 1 clove garlic, minced
- ¼ bunch parsley, leaves removed
- 125 ml (1/2 cup) chestnuts
- 1 turkey breast
- 30 ml (2 tbsp.) Mycryo cocoa butter
Preparation
- To prepare the stuffing, purée the ground pork, cream, shallot, garlic and parsley in a food processor. Add the chestnut pieces and season.
- Preheat the oven, rack in the middle, to 200° C (400˚ F).
- Using a knife, open the turkey breast into a wallet and stuff it with the stuffing. Close and tie the breast.
- Sprinkle with salt, pepper and Mycryo cocoa butter.
- In a hot, fat-free frying pan, brown the turkey breast on both sides.
- Place turkey breast in a roasting pan and bake for 45 minutes or until desired doneness (between 72° and 77° C / 150° F).
