SALMON POKÉ WITH PEPPERS AND BEAN SPROUTS

Ingredients
- 30 ml (2 tablespoons) sesame oil
- 15 ml (1 tablespoon) soy sauce
- 30 ml (2 tablespoons) sesame seeds
- 5 ml (1 tsp.) Sambal Oelek
- 400 g (13 1/2 oz) fresh salmon, cubed
- 30 ml (2 tbsp.) canola oil
- 45 ml (3 tbsp.) rice vinegar
- 1 L (4 cups) cooked rice
- 1 avocado, sliced
- 250 ml (1 cup) bean sprouts
- 250 ml (1 cup) shredded red cabbage
- 250 ml (1 cup) carrots, grated
- 1 bell bell pepper, julienned
- 60 ml (4 tbsp.) fresh coriander leaves
- salt and pepper to taste
Preparation
- In a bowl, combine sesame oil, soy sauce, sesame seeds, half the Sambal olek, add salmon cubes and coat with sauce.
- In another bowl, prepare the vinaigrette, mixing the canola oil, rice vinegar, remaining Sambal Oelek, salt and pepper.
- In 4 serving bowls, divide the rice, add a portion of salmon, a few slices of avocado, bean sprouts, cabbage, grated carrots, bell bell pepper and coriander.
- On top, spread the prepared vinaigrette and add salt and pepper to taste.
