SALMON AND AVOCADO POKÉ

Ingredients
- 400 g (13 1/2 oz) salmon, cubed
- 60 ml (4 tablespoons) sesame oil
- 5 ml (1 tsp.) Sriracha hot sauce
- 30 ml (2 tbsp.) soy sauce
- 60 ml (4 tbsp.) rice vinegar
- 60 ml (4 tbsp.) canola oil
- 4 servings rice, cooked
- 2 avocados, sliced
- 30 ml (2 tbsp.) sesame seeds
- 30 ml (2 tbsp.) sunflower seeds
- 125 ml (1/2 cup) coriander leaves
- salt and freshly ground pepper to taste
Preparation
- In a bowl, combine salmon cubes, sesame oil, half the hot sauce and soy sauce.
- In another bowl, mix rice vinegar, canola oil, remaining hot sauce, salt and pepper. Check seasoning.
- In each serving bowl, divide the rice, daikon, avocado slices, sesame and sunflower seeds, then the prepared sauce and a few coriander leaves on top.
