Poké salmon and avocado

SALMON AND AVOCADO POKÉ

Portions : 4 - Preparation time : 15 minutes

Ingredients

  • 400 g (13 1/2 oz) salmon, cubed
  • 60 ml (4 tablespoons) sesame oil
  • 5 ml (1 tsp.) Sriracha hot sauce
  • 30 ml (2 tbsp.) soy sauce
  • 60 ml (4 tbsp.) rice vinegar
  • 60 ml (4 tbsp.) canola oil
  • 4 servings rice, cooked
  • 2 avocados, sliced
  • 30 ml (2 tbsp.) sesame seeds
  • 30 ml (2 tbsp.) sunflower seeds
  • 125 ml (1/2 cup) coriander leaves
  • salt and freshly ground pepper to taste

Preparation

  1. In a bowl, combine salmon cubes, sesame oil, half the hot sauce and soy sauce.
  2. In another bowl, mix rice vinegar, canola oil, remaining hot sauce, salt and pepper. Check seasoning.
  3. In each serving bowl, divide the rice, daikon, avocado slices, sesame and sunflower seeds, then the prepared sauce and a few coriander leaves on top.
