Creamy polenta with cocoa

CREAMY COCOA POLENTA

Serves 8

Preparation time: 5 minutes - Cooking time: 15 minutes

Ingredients

  • 410 ml (1 2/3 cups) milk
  • 190 ml (3/4 cup) 35% cream
  • 410 ml (1 2/3 cups) low-salt chicken broth
  • 5 ml (1 teaspoon) thyme
  • 1 clove garlic, minced
  • 150 gr (5.5 oz) cornmeal, medium
  • 30 gr (1 oz) butter, cubed
  • 15 ml (1 tbsp) Grand Caraque 100% cocoa chocolate, Cacao Barry
  • 85 gr (3 oz) grated Parmesan cheese
  • salt and pepper to taste

Preparation

  1. In a saucepan, bring milk, cream, stock, thyme, garlic, salt and pepper to a boil.
  2. Strain and return the liquid to the pan.
  3. Heat the saucepan over a very low heat and pour in the semolina, stirring constantly for about 10 minutes, until the semolina has absorbed the liquid.
  4. Stir in the butter, chocolate and Parmesan.
  5. Check the seasoning. Serve immediately.
