CREAMY COCOA POLENTA
Serves 8
Preparation time: 5 minutes - Cooking time: 15 minutes
Ingredients
- 410 ml (1 2/3 cups) milk
- 190 ml (3/4 cup) 35% cream
- 410 ml (1 2/3 cups) low-salt chicken broth
- 5 ml (1 teaspoon) thyme
- 1 clove garlic, minced
- 150 gr (5.5 oz) cornmeal, medium
- 30 gr (1 oz) butter, cubed
- 15 ml (1 tbsp) Grand Caraque 100% cocoa chocolate, Cacao Barry
- 85 gr (3 oz) grated Parmesan cheese
- salt and pepper to taste
Preparation
- In a saucepan, bring milk, cream, stock, thyme, garlic, salt and pepper to a boil.
- Strain and return the liquid to the pan.
- Heat the saucepan over a very low heat and pour in the semolina, stirring constantly for about 10 minutes, until the semolina has absorbed the liquid.
- Stir in the butter, chocolate and Parmesan.
- Check the seasoning. Serve immediately.
