Smoked potato with melted cheese

SMOKED POTATO WITH MELTED CHEESE

Portions : 4 - Preparation : 10 minutes - Cooking time : 15 to 20 minutes

Ingredients

  • 12 Ratte potatoes
  • Wood chips of your choice
  • 1 bunch thyme
  • 6 slices raclette cheese
  • 15 ml (1 tbsp.) white balsamic vinegar
  • Salt and pepper to taste

Preparation

  1. Place the potatoes in a large pot of cold, salted water, bring to the boil and cook until the potatoes are cooked but still firm. Drain and slice in half.
  2. Place the wood shavings and thyme bouquet in an aluminum container.
  3. Using a blowtorch, ignite the wood shavings and place the container in the BBQ.
  4. Place the potatoes on the BBQ's cool grill, close the lid and let the potatoes soak up the smoke for 10 minutes, then take them out.
  5. Preheat the BBQ to maximum.
  6. Lightly hollow out the flesh of each potato half and place a piece of cheese in the hollow.
  7. Place the potatoes on the BBQ grill and cook for 5 minutes.
  8. Just before serving, drizzle a few drops of balsamic vinegar over the potatoes.
