FOOD BANK-STYLE CHICKEN

Ingredients

  • 500 ml (2 cups) raw rice
  • 750 ml (3 cups) water for cooking rice
  • 750 ml (3 cups) apple juice
  • 250 ml (1 cup) tomato sauce
  • 45 ml (3 tbsp.) soy sauce
  • Chili pepper to taste
  • 2 red peppers, cut into strips
  • 4 chicken breasts, cubed
  • 60 ml (4 tbsp.) flour
  • 2 eggs
  • 500 ml (2 cups) Rice krispies or Corn flakes
  • 125 ml (1/2 cup) oil
  • salt and pepper to taste

Preparation

  1. Rinse the rice under cold running water. In a saucepan, add the rice, cooking water, a little salt and bring to the boil. Then turn down the heat to minimum, stir and place a lid on top. Leave to cook until all the water has been absorbed by the rice - 10 to 15 minutes, depending on the pan and the heat. Stir and check seasoning. Set aside.
  2. Meanwhile, in a saucepan, bring the apple juice, tomato sauce, soy sauce and chili pepper to the boil. Reduce to a syrupy consistency. Add the red peppers. Check seasoning and keep warm.
  3. Prepare 3 bowls: flour in one, eggs beaten with a fork in another, and cereal in the third.
  4. Season the chicken cubes with salt and pepper.
  5. Roll the chicken cubes in the flour, then in the beaten eggs and finally in the cereal.
  6. In a hot frying pan, brown the breaded chicken cubes in oil, about 3 minutes on each side. Check for doneness, which may vary according to the size of the chicken cubes.
  7. Divide the rice, breaded chicken cubes and sauce between the plates.
