- 2 eggs
- 500 ml (2 cups) Rice krispies or Corn flakes

Preparation
- Rinse the rice under cold running water. In a saucepan, add the rice, cooking water, a little salt and bring to the boil. Then turn down the heat to minimum, stir and place a lid on top. Leave to cook until all the water has been absorbed by the rice - 10 to 15 minutes, depending on the pan and the heat. Stir and check seasoning. Set aside.
- Meanwhile, in a saucepan, bring the apple juice, tomato sauce, soy sauce and chili pepper to the boil. Reduce to a syrupy consistency. Add the red peppers. Check seasoning and keep warm.
- Prepare 3 bowls: flour in one, eggs beaten with a fork in another, and cereal in the third.
- Season the chicken cubes with salt and pepper.
- Roll the chicken cubes in the flour, then in the beaten eggs and finally in the cereal.
- In a hot frying pan, brown the breaded chicken cubes in oil, about 3 minutes on each side. Check for doneness, which may vary according to the size of the chicken cubes.
- Divide the rice, breaded chicken cubes and sauce between the plates.
